Steakhouse Choice Boneless Rib Eye Steak

A long time marinating in the rub highlights the flavor of these boneless rib eye steaks.
Ingredients
1 Rib Eye steak or 3/4 pound of meat per person, 1 1/2 to 2 inches thick
Pepper
Fresh Garlic
Salt

Directions
1. In a small bowl, mix together the pepper, garlic, and smoked salt.
2. Place the steaks in a shallow dish and rub the garlic mixture all over the meat.
3. Marinate at room temperature for 1 to 2 hours or, better still, covered in the refrigerator for up to 2 days.
4. Turn the meat from time to time to coat both sides evenly.
5. Remove the steak from the refrigerator one hour before grilling. With a paper towel, wipe off excess rub.
6. When you are ready to grill, preheat barbeque grill.
Grilling time:
1 inch thick: Rare, 6-8 minutes; Medium, 8-10 minutes; Well, 10-14 minutes; Heat, High.
1 1/2 inch thick: Rare, 8-10 minutes; Medium, 10-12 minutes; Well, 12-16 minutes; Heat, High.
2 inches thick: Rare, 12-16 minutes; Medium, 16-20 minutes; Well, 20-24 minutes; Heat, Medium.
