Clamato® Beef Enchiladas

What do you do when you have a house full of hungry relatives? Try our flavorful beef enchiladas with a flavor everyone enjoys.

Ingredients

  5 Tbs Vegetable Oil

  1 lb Beef – Ground, Chopped, or in Fajitas

  2 Tbs Salt

  1 Tbs Onion Powder

  1 Tbs Black Pepper

  2 Tbs Garlic Powder

  1 Medium Onion

  2 cloves Garlic

  1 Jalapeno Pepper

  2 tsp Ground Cumin

  1 tsp Ground Coriander

  3 cups Clamato®

  4 Tbs Tomato Paste

  1/2 cup Water

  Tortilla Wraps

  1/2 lb Shredded Cheddar Cheese

  1/2 lb Monterey Jack Cheese

Directions

In a sauté pan, heat 3 tbsp of vegetable oil over med–high, add 1lb of your favorite beef (ground, chopped or in fajitas), 1 tbsp of salt, 1 tbsp of onion powder, 1 teaspoon of black pepper, and 2 tbsp of garlic powder. Mix well.

Sauce: In another sauté pan heat 2 tbsp of oil, add 1 medium onion chopped, garlic and 1 jalapeno chopped. Sauté for 10 minutes. Add 2 teaspoons of ground cumin, 1 teaspoon of ground coriander, 1 teaspoon of salt, 3 cups of Clamato®, 4 tbsp of tomato paste and 1/2 cup of water. Reduce heat and simmer for 15 minutes, stir frequently.

Roll up each tortilla with the beef and shredded Cheddar and Monterrey Jack cheese; place in a greased baking dish and spoon the sauce over. Cover with aluminum foil and bake at 350° F for 10 minutes. Uncover and sparkle cheese; bake for 5 more minutes and serve immediately.
