Shrimp Tostadas

You can substitute cooked lobster or firm-fleshed fish for the shrimp in this recipe if you wish. Seafood is a very popular main ingredient in Mexican cooking, especially in the coastal towns and villages.

Ingredients

  1 lb cooked bay shrimp

  1 3/4 cups recipe ready diced tomatoes (14.5-ounce can)

  1 cup chopped white onion (1 small)

  1/2 cup ORTEGA® Diced Green Chiles (4-ounce can)

  1/4 cup chopped fresh cilantro

  3 Tbs vegetable oil

  3 Tbs lime juice

  1 3/4 cups ORTEGA® Refried Beans with Jalapeños

  10 ORTEGA® Tostada Shells 1 package

  2 1/2 cups shredded romaine lettuce

COMBINE shrimp, tomatoes, onion, chiles, cilantro, vegetable oil and lime juice in medium bowl; cover. (May be prepared ahead and refrigerated.)

SPREAD about 2 tablespoons beans over each tostada shell. Top with 1/4 cup lettuce and 1/2 cup shrimp mixture.
