Crusted Salmon with Mediterranean Tapenade

Tapenade, a flavorful mixture of olives and seasonings, is brushed onto salmon fillets. The fillets are coated with bread crumbs and Parmesan cheese for additional flavor and texture. Photo credit: Liren Baker from Kitchen Confidante.

Ingredients

  1/4 cup dry bread crumbs

  2 Tbs grated Parmesan cheese

  1/3 cup McCormick® Mediterranean Seafood Sauce

  1 Tbs finely chopped black olives

  1 lb salmon fillets, skin removed

Directions

Preheat oven to 450°F. Mix bread crumbs and Parmesan cheese in shallow dish. Set aside.

Mix Seafood Sauce and olives. Place salmon in 13x9-inch baking dish. Brush both sides of salmon fillets with sauce mixture. Coat both sides with bread crumb mixture.

Bake 15 to 20 minutes or until fish flakes easily with a fork. Serve with additional Seafood Sauce, if desired.
