Lemonade Fried Chicken

Prep Time: 2 hours 20 minutes

Cook Time: 1 hour 15 minutes

Ingredients

  6 fluid ounces frozen concentrate lemonade

  1 cup water

  2 1/2 pounds Fresh Whole Chicken

  1/4 cups flour

  1 tsp salt

  1/4 tsp pepper

  1 cup oil

  2 Tbs butter, melted

Rinse and pat dry chicken

In a small bowl mix together concentrated lemonade (undiluted) and water

In a baking dish arrange cut-up chicken in a single layer, pour lemonade over and refrigerate, covered, for 2 hours

Drain, reserving the marinade

In a large plastic bag add flour, salt, and pepper, shake all together

Dip dry chicken, one piece at a time, and toss to coat evenly

In a large skillet over medium heat, cook oil; add coated chicken and cook until evenly browned

Remove and arrange in a single layer in a shallow baking pan

Brush the chicken with melted butter and carefully add the reserved marinade

Bake in a 350F oven uncovered about 1 hour, basting every 15 minutes

About 15 minutes before the chicken is done, drain the juices from the baking dish
