Southwest Quinoa Bowl

Prep Time: 15 minutes

Servings: 2 generously

Ingredients

  1 box Near East Roasted Red Pepper and Basil quinoa

  1 cup canned black beans

  1 can cooked shredded or diced Rotisserie chicken breast

  Topping Options:

  Diced avocado

  Salsa/diced tomatoes

  Chopped cilantro

  Shredded cheese

  Sour cream

  Lime juice

Directions

1. Prepare quinoa according to instructions on box.

2. When it is done, stir in black beans and chicken.
