Ham Medallions with Side Dishes

Prep Time: 15 minutes

Cook Time: 50 minutes

Ham medallions with luscious side dishes of bacon and ranch flavored potatoes along with ginger glazed carrots.

Ingredients

  Ham medallions

  For the Bacon Ranch Roasted Taters:

  3 large baking potatoes, cut into 1/2-inch thick slices

  8 slices Farmland ® Double Smoked Bacon, cut into 1-inch slices

  1 envelope (1 oz.) ranch salad dressing mix

  For the Ginger Glazed Baby Carrots:

  1/4 cup butter

  1 1/2 tsp ground ginger

  1 lb baby carrots

  1/2 cup brown sugar

For the Ham Medallions:

Heat skillet over medium-high heat. Place medallions in skillet and cook 2 to 3 minutes per side until heated through.

For the Bacon Ranch Roasted Taters:

1. Heat oven to 425°F. Arrange potatoes in single layer on baking sheet.

2. Separate bacon pieces and layer over potatoes.

3. Bake at 425°F for 10 minutes. Turn potatoes over and toss together with bacon. Bake an additional 10 minutes.

4. Sprinkle ranch dressing mix over top of bacon and potatoes; mix to coat. Bake an additional 10 to 15 minutes until potatoes are browned and tender.

For the Ginger Glazed Baby Carrots:

1. Melt butter in medium skillet over medium-high heat; whisk in ginger.

2. Add carrots to skillet, toss to coat with butter. Cover skillet and cook 10 to 15 minutes, stirring occasionally, until carrots are tender and begin to brown.

3. Remove cover; stir in brown sugar. Cook and stir until brown sugar begins to bubble.
